RESERVA PAISAJISTICA NOR YAUYOS-COCHAS, BELLEZA NATURAL DEL PERU

This is a guest post in Spanish by a special Peruvian friend of mine who will be going by the alias Sciencewoman.  She will be writing articles in Spanish to start with, but eventually she will also be writing articles in English.  This article is talking about La Reserva Paisajística Nor Yauyos-Cochas, a beautiful nature reserve in Peru.  I hope you all enjoy it and learn something new about Peru.  Feel free to comment on Twitter or Patreon!

Three Tasty Peruvian Dishes

Lomo Saltado

Lomo saltado is a dish that easy to love as the two main ingredients are steak and french fries.  Onion is added for flavor, with the option to add peeled tomatoes (only the sweet parts, no skin or seeds).  Most recipe you cook the steak and fries separately then add all the ingredients together as well as an aji amarillo. You get a lovely tasting meal that even the pickiest eaters are sure to enjoy!  Can be eaten with rice.

Aji Amarillo, A staple of Peruvian cooking

Aji Amarillo is a yellow chili pepper common in Peru.  Much of Peruvian food uses this pepper to add flavor and heat to the dishes.  It is about as hot as a jalapeño pepper, but the burn you feel is quite different.   Jalapeños burn in the back of the throat, where aji amarillos burn mostly on the tongue making it easier to handle in my opinion.  The smell of the peppers is considered grassy, and the flavor is very unique.
