Three Tasty Peruvian Dishes

Lomo Saltado 

Lomo saltado is a dish that easy to love as the two main ingredients are steak and french fries.  Onion is added for flavor, with the option to add peeled tomatoes (only the sweet parts, no skin or seeds).  Most recipe you cook the steak and fries separately then add all the ingredients together as well as an aji amarillo. You get a lovely tasting meal that even the pickiest eaters are sure to enjoy!  Can be eaten with rice.

Papa a la Huancaína

This simple dish is just boiled potatoes with a lovely sauce that includes usually a white cheese, bread crumbs or crackers, milk, and of course aji amarillos, all blended together.  I have only used aji paste so far which can be found on amazon.  It looks like you can even buy a premade sauce that saves you time.  Keep in mind that I haven’t used a premade sauce so I am unsure of how it tastes.  Topping include olives and hard boiled eggs.

Causa Rellena

This is a layered dish with potatoes and aji amarillo blended together with a meat, fish, or vegetable salad in the middle.  A can of chicken or tuna with some mayonnaise is all you need!  There are many possible toppings that you can add to give it your own personal flair.
